How to prepare a delicious Bavarian coffee cake

Ingredients

  • 100 g espresso coffee
  • 4 egg yolks
  • 150 g whole milk
  • 175 g sugar
  • 300 g cream
  • 25 ml Borghetti coffee liqueur
  •  5 g gelatine

The method to prepare a Bavarian coffee cake

  •  First, put the gelatine in cold water so that it softens.
  •  Next, bring the milk and coffee to a boil in a saucepan and mix the sugar and egg   yolks with a whisk in another container.
  •  When the mixture of egg yolks and sugar has reached a whitish colour, add your milk and coffee mix combining all the ingredients using a spoon.
  • At this point, pour the mixture into a saucepan and simmer without ever stopping stirring – it will be ready as soon as it gets creamy.
  •  Once the cream has been removed from the heat, melt the gelatine inside.
  • As soon as this step is completed, cover the cream with cling film and let it cool until it reaches room temperature.
  • Time to whip the cream and add it, mixing with movements from the bottom up.
  •   All you have to do now is wet the moulds with cold water and pour the mixture into them, letting it rest in the fridge for about six hours.
  • Turn the moulds upside down on a plate, garnish at leisure and serve.

Despite the name, Bavarian cake's origins seem to be French. It used to be consumed in the early eighteenth century in Germany as a drink made from milk, tea and liqueur imported by French chefs who worked at the Bavarian court. A century later it would have spread in France as the dessert we currently know, as a variant of this drink.

You can decorate your Bavarian Coffee Cake in different ways, including a dollop of cream, cinnamon, coffee beans or chopped dried fruit.
