During his childhood in Alto Adige, Norbert Niederkofler spent his days in the kitchen of his family’s little hotel, but even then he dreamed of traveling the world. He attended the catering school in Tegernsee in Germany, later going on to continue his training in Italy and hone his talent in famous restaurants in London, Zurich and Milan. During the eighties and nineties, he was influenced by top chefs. In particular, Eckart Witzigmann in Munich and David Bouley in New York taught Norbert two fundamental prerequisites to achieving excellence in the kitchen: unconditional respect for nature and the quality of the raw materials.
His story came full circle in 1996 in San Cassiano, when Niederkofler opened the St. Hubertus restaurant in the Hotel Rosa Alpina, using only local ingredients and promoting the natural treasures of the Dolomites. Four years after its launch, the St. Hubertus received its first Michelin star, with the second arriving in 2007 and the third in 2018.
The chef from Alto Adige has been a Lavazza Brand Ambassador since 2016, the year in which Niederkofler founded Care’s, an institution for ethical and sustainable cuisine.

In March 2018 he acted as host in the Chesal 1805 restaurant in Bardonecchia, where he organized the Cena Stellata, or Starlit Meal, a true homage to mountain culture.
