Neva Cuisine (Paris). 

Paris native Yannick Tranchant developed a passion for cuisine early in life when, after finishing his studies as a cook, he made the marvelous discovery of the world of pastries in the restaurant where his sister worked, the Sheraton Hotel in Roissy, where he took on the position of Pastry Chef.

He departed for Ireland, where he remained for six months in a gourmet French restaurant, seeking out new sources of inspiration. He returned to France, where he became the Second Pastry Chef at La Grande Cascade, advancing after two years to the role of Head Pastry Chef.

 

These were to be the most crucial eight years of his career, as it was right here that Yannick met Beatriz Gonzalez, the Deputy Sous Chef originally from Mexico and graduate of the Paul Bocuse institute.

The duo, whose gastronomic worlds and styles complement each other, harbored the same wish: to break free and open their own restaurant. So it was that in July 2011 Neva Cuisine was born, the restaurant opened along with Beatriz Gonzalez’ husband Mathieu Marcant, in the eight arrondissement of Paris.

 

At Neva Cuisine, Yannick expresses himself through his dishes with simplicity and coherence. His desserts represent a signature product, marrying textures and temperatures. Light and sumptuous at the same time, his desserts impart a sensation of joy onto those who taste them.

 

Inspired by traditional French pastries, they are a delight to the eyes too. When choosing ingredients, there is an emphasis on simplicity: no complex or ostentatious flavorings.
