Central Restaurante (Lima) 

Born in Peru in 1977, Virgilio Martinez studied law in Lima before devoting himself entirely to cooking: after attending the Cordon Bleu institution between London and Ottawa, he took his first steps in a culinary environment working for chef Gastón Acurio, who would later nominate him Executive Chef of his restaurant Astrid y Gaston in Lima. In 2010, Virgilio opened Central, the restaurant which, within just a few years, would lead him to be hailed as an ambassador for Peruvian cuisine worldwide.  

Located in the very heart of Lima, dishes at Central signal a new era for Latin American gastronomy, one distinguished by vibrant colors and a courageous creativity. Research into indigenous ingredients—culminating in the Mater Iniciativa project—and the idea of presenting them based on the country’s altitudes have earned the restaurant a spot among the best 50 in the world. After three Michelin stars, in 2014 Central was voted best restaurant in Latin America; while Lima, founded in London in 2012, became the first Peruvian restaurant to receive a star in Europe.
Virgilio Martinez is a Lavazza Brand Ambassador: in 2017 he presented a number of recipes to promote Single Origin, the line of coffees dedicated to the relationship between the product and the land.
