Senses (Warsaw)

Born in Monopoli in 1980, Italian chef Andrea Camastra is a master of flavor and sensory combinations. His love and respect for natural produce come from Bari, the city where he was born and a place renowned for its tradition of fresh raw fish.

Andrea honed his craft in some of the best restaurants in the world. He was named Chef of the Year North England, Chef of the Future 2015, and Chef of the Year 2017 by the Gault & Millau Guide, as well as earning a Michelin star for his restaurant Senses in Warsaw. 

In June 2019, he joined Lavazza’s Top Gastronomy as the Italian brand’s first ambassador in Poland, with the aim of creating new recipes that present coffee as the protagonist in all its forms, drawing from his own aptitude and constant experimentation.

 

Andrea has mastered the international culinary discourse and is a proponent of Hervé This’ “note by note” cooking techniques: a new approach to gastronomy that uses pure compounds, extracts from natural ingredients, and flavor and fragrance molecules that are cloned and then applied to cuisine. 

Andrea is fascinated by the chemistry of food. He creates new dishes and flavors that do not exist in nature, through his collaboration with scientist Wiktor Faliszewski.
