Alfredo Russo was born in Turin in 1968; at just 13 he discovered his passion for cooking and decided to follow it, first by enrolling in a catering school and later by working his way through the ranks in three Michelin-starred restaurants in Piedmont.
Thus began Alfredo’s culinary adventures, with a journey through haute cuisine that strengthened his human spirit and prepared him for his future revolutionary creations.
In 1990, he focused most of his efforts on opening his own restaurant: the Dolce Stil Novo, established in collaboration with his wife Stefania in the small town of Cirié on the outskirts of Turin. It is the only restaurant located inside a palace, the Reggia di Venaria; it is a location of enormous charm, which impresses visitors with its beauty and grandeur and boasts a breathtaking view. The Michelin star was awarded after just three years in business.
Towards the end of 2008, the Dolce Stil Novo moved to a UNESCO World Heritage site: the Reggia di Venaria palace. Thus, Alfredo Russo is not merely a name linked to a Michelin-starred restaurant, but is also a byword for a wider philosophy of gastronomy and hospitality, which aims to develop new concepts for large and small hotel chains in Europe, Asia, the Middle East and America.
In 2004, the l’Espresso culinary guide nominated him Italy’s best young chef.
Dolce Stil Novo
The name ‘Dolce Stil Novo’ (Sweet New Style) was chosen by Alfredo Russo because he “wanted to offer a new style of cooking compared to other restaurants in the area, and Dolce Stil Novo had a nice ring to it”. His cuisine is imbued with enormous respect for the past and the constant search for simplicity, for lines and solutions capable of combining taste and cheer. His dishes are never heavy, but rather elegant in a carefree, joyful way.
