How to make Coffee Pancakes

 

First of all: prepare the coffee with a filter coffee machine or a moka pot and, when ready, pour it into a container to cool. Then take the eggs and separate the yolks and egg whites into two bowls. Add the sugar to the egg yolks and mix together with a whisk until combined. Add the flour, milk, coffee, and salt to the egg yolk mixture, and continue whisking.

 

Beat the egg whites until stiff and pour them into the mixture you have just prepared. Combine everything thoroughly, taking care to mix from the bottom up to preserve the whipped egg whites. Cover the bowl with a cloth or plastic wrap and leave to stand for at least 30 minutes in the fridge.

 

To cook the pancakes, take a medium to small non-stick frying pan: melt a knob of butter and pour in the mixture, a little at a time, using a ladle. Cook these delicious pancakes on both sides until golden.

 

Stack three or four pancakes on a plate and add your favorite topping: icing sugar, dark chocolate flakes, whipped cream, jam or honey.

2 large eggs

150 ml (5 fl oz) milk

150 g (1 1/4 cups) flour

50 g (1.8 oz) sugar

a pinch of salt
